We love to make mason jar meals to prep for the week. We fill them up with different fresh salads, breakfast parfaits, chicken chop-chops, and more. One of our latest favorites to fill up mason jars with is this Thai Peanut Broccoli Slaw.

How we wish we were in New Orleans right now hanging out in a balcony on Bourbon Street looking out at all the Mardi Gras celebrations taking place! We aren’t particularly fans of the scene going down on Bourbon-it’s freaking crazy out there-but it’s the best part of French Quarter to be at in order to enjoy the celebrations.
Trust me, we truly considered going this year for Mardi Gras because our friends, Angie and Marius, from Anchorage, Alaska invited us to join them. We think about it every year but their invitation was pretty convincing. Unfortunately, a huge assignment came through for me that I have to travel for so this Upside Down Passionfruit Pie is just going to have to bring Mardi Gras home to us.
As much as we want to go to New Orleans this year for Mardi Gras, we have to face the music. We cannot make it happen. We have lots of work to do around the house and so much to save up for in order to have an awesome backpacking trip in Europe, come April. Next year, we vow to try harder. Forget trying, we will make it happen.
