Ahhhh…Ahi Tuna Poke, one of our favorite dishes of all time! I first encountered this dish while sailing through the islands of Hawaii. As soon as I got back home, I wanted my wife to try some poke, too. She’s always willing to try new things, more than me sometimes. But, we struggled to find a spot that would serve us the traditional poke bowl I knew and loved.
In Orlando, we realized Ahi Tuna Poke is not an easy dish to find. Bummer! Having just recently been exposed to such an interesting dish, we were not confident in making it ourselves. Double bummer! The start of The Legendary Road Trip is now upon us. We never have been more nervous in our lives. We are embarking on a new journey and, as we drive on the road right now, the excitement just builds within. Our first stop was The Florida State Capital in Tallahassee, Florida. Of course, we had to make a stop at our own states capital before the real trip again. We, then, stopped in Mobile, Alabama to stop by this quaint little town called Ashland Place Historic District. I know I hit it right in the ballpark the other day with my Coconut Chicken Fingers + Mango Dipping Sauce and not only did my picky, pretty unhealthy eating house guests love it but they wished there was more. This meal right here! This meal right here! I always loved coconut shrimp. I actually prefer coconut prawns. Specially when they slice them down the middle and fry them in coconut-y unhealthy goodness. They usually pair it with some sort of spicy pineapple jelly dipping sauce that is just so finger-licking good.
These Coconut Shrimp on the other hand, although not sliced down the middle because they are much smaller than regular prawns, are much more healthy than any Coconut Shrimp in any menu for any take out, delivery, or sit down orders. These Coconut Shrimp are a dream. These Coconut Shrimp are the dream come true of one day biting into crispy, coconut breaded shrimp without the guilt, without the unhealthy stuff, without flour, without sugar, and definitely without crazy, greasy, frying pans full of sick vegetable oil.
