There’s a groovy little tiki bar right off of the New Smyrna Beach Marina called Outriggers Tiki Bar and Grille. They have an amazing, eclectic menu. Our family has an absolute obsession with making stuffed mushrooms! Are you a fan of stuffed mushrooms? If you look through the blog, you will find a variety of different types of stuffed mushrooms we’ve made over the years. We never get tired of coming up with different combinations of flavors and wholesome ingredients. They are all delicious and decadent. You know I love all things festive and this week is St. Patrick’s Day. We hung up some lucky four leaf clover garland, bought the cutest floral arrangement made of eucalyptus and other gorgeous greens, made the most adorable wreath for the front door and we basically have the house all covered in everything green. I made these cute Rainbow Fruit Skewers to get a little taste of the rainbow on a search for my own pot of gold this year. Tell me you love Mozzarella Sticks! Growing up, these were an all-time favorite of mine. Almost every restaurant we went to that had a kids’ menu had Mozzarella Sticks and you better believe that that was my meal of choice. There is nothing like that piping hot, crispy breaded cheese stick of joy that melts as you pull both sides and wrap the cheese around your finger. Or is that just me?
Anyway, it has been way too long since I had Mozzarella Sticks in my life. So many things given up when I gave up sugar and flour a few years back. There are definitely some questionable ingredients in Mozzarella Sticks all across the board, whether in a restaurant, homemade or found in the frozen section of your local supermarket. So I can say I am pretty happy staying away from that; yet, I had a deep longing for some good Mozzarella Sticks. I bet you did not see that one coming, believe you me, we did not at all either. We tried to do everything in our power to keep it on the hush-hush, that was super freaking hard. I just feel elevated to another point now through exercise and healthy eating. I’ve broken through some old chains and kicked down the walls. With Him anything really is possible. God is really good because when you are persistent in prayer, He succeeds it all. After the phenomenal Hawaiian Pizza that we made with our cousin, Cathy, this week, we didn’t think we could ever have anything better. With Herlis in town, it’s not too easy to get her to eat veggies. I guess when you involve kids in the kitchen while cooking it can make everything much funner. She was definitely willing to eat a little bit of hummus with red peppers and some pretzels from our veggie tray being that it was presented in the shape of an American flag. This was a definite plus!
It has been a hard and tough week thus far. I was very proud of us to end the week with her eating some vegetables and fruits willingly.
