Happy anniversary, baby bear! This is our candy anniversary; six whole years! I mean, that’s 72 months, 313 weeks, 2191 days, 52,594 hours, 3.156 million minutes of our love still ticking. Anyone who knows us well knows just about how much we have been through together. It’s incredible to see God really has chosen a soulmate for me, for her, for us. I can see the work He does in our lives and how He has restored so many broken parts of ourselves that He could not mend if we were apart. These Sugar + Spice Sweet Potatoes are for you, my sweet pea. Read More
And, the story continues! I finally had the nerve to ask the homeowners association (HOA) about the plans for my backyard. I was practically devastated when they told me they had yet to get approval from the board. Be that as it may, we are renting from the owner of the property until we find a property of our own to purchase. Read More
Today, Cathy and I are at it yet again! In preparation for a very impromptu BBQ by the pool with the family, we decided to make a few sides to go with some delicious burgers. Don’t worry, I will share the recipes for the burgers later. It might surprise you but the burgers are not the star of the show this evening. This Loaded Baked Potato Salad and the BBQ Roasted Veggies that will follow this post are the definite show stoppers for tonight! Read More
You know those days that you just crave Jalapeño Poppers? If you don’t know what I’m talking about, we can’t be friends. Just kidding! I may not be as humorous as I think but at least I try. Well, today was one of those days. I have memories of my cousin, Lala, and I going to the 24-hour Arby’s in Kendall in the middle of the night for a late night craving of Jalapeño Poppers with boysenberry sauce. Read More
I am a true sucker for comfort food. I think many of us can say the same. When it comes to comfort food, there are definitely some specific meals that I think about and remember from my childhood. Speaking of specific dishes, Pasta Primavera is one of them. Growing up, I always wanted to cook myself; therefore, my grandmother taught me everything she knew about the kitchen. Read More
Hello blogosphere! I have been gone for almost a month now. I hate when I leave for such a long period of time without announcing it. I get so wrapped up in the packing, planning, and missing of the family prior to my actual departure on a trip that I forget to blog. As always, I apologize for that. I do really mean it, though. First creation I made when I got home was this Fresh Crab Salad as a little reminder of Hawaii. I miss it but I missed the comfort of my own home and family more.
Sometimes, life throws curveballs at you even if it’s a positive one. Completely out of time, I put the blog to the bottom of my to do list. I look forward to a day where I have less and less to worry about doing my blog like it’s a chore but to a day where I can write it because I have plenty of time on my watch to do so. At this point, I am just happy to be home and relaxing before my birthday. Read More
Before you think of the scene in The Grinch That Stole Christmas with Jim Carrey where the Grinch bites into a raw onion and juicy drips down into his thick green, manly beard that makes virtually anyone cringe from the inside out, think again. I have had this on my mind for ages but every time I bought the onions for it, I’d think of that movie scene and spiralize them instead for several uses. Now, I came to my conclusion that this had to be something delicious. I would dream of all different flavors that I could use to make this dish come to life. Read More
I had been eyeing a delicious warm potato salad that was similar to this on Pinterest. It was full of fatty ingredients and tons of sugar. I left it on my secret Pinterest board for as long as I can remember. That board serves as a purpose for inspiration and, boy, was I inspired this fine morning! Thanks dude with the idea of a really unhealthy Honey Dijon Potato Salad with good flavors.
Thanks to dude, I have come up with this wonderful healthy alternative that I just loooooove. The second I tried it, I knew I was in heaven. Read More
