Every year when Thanksgiving comes around, I remember the delicious Green Bean Casserole my cousin, Lala, would make as her signature dish. Her recipe was adapted from Paula Deen, and; of course, I thought my cousin’s was better. This year I am not too sure because this homemade Cream of Mushroom Soup is going to be a game changer, for years to come. Read More
So, to be as honest as I can be, I have to start on a fresh clean slate. When we moved out of our old house into The one we are in now, I only saw the place once. As I have said before, Marylex was working all the time when we were just about ready to move. During that time, sharing a car and all, we didn’t really pay much attention to where we were moving into but more so the fact that we were moving I needed to do it as fast as possible in order to settle in. ALOHA! Have you ever been to any of the beautiful islands of Hawaii? I went to Hawaii for work a year ago. And, although my time in Hawaii I was very lonesome, I have great memories of the time I spent there working and exploring. I want to have the idea of creating the salad, I wanted to encompass the good memories of having traveled through all of the islands in Hawaii and without the taste of loneliness I felt while being there. It’s crazy to me to think that exactly a year ago today I was embarking on a journey of finding myself while out at sea working in Hawaii. Read More

There are times for everything and there is a time for this salad before the summer is over. We get enough watermelon in the summer and pomegranate seeds in the fall. Why do people forget to ever mix two and two together? I guess I just needed to be the one to break the ice and share this delicious Rainbow Summer Salad with you all. I’m going to be quite honest here, there are many times where there are barely things in the fridge as we await to go to the grocery store. I am sure just about every American family has days like these. When this comes up, I always have something crazy yet delicious up my sleeve. On days like those, I grab everything in the fridge and make a yummy salad. This Rainbow Summer Salad right here is just that. Read More

Today, Cathy and I are at it yet again! In preparation for a very impromptu BBQ by the pool with the family, we decided to make a few sides to go with some delicious burgers. Don’t worry, I will share the recipes for the burgers later. It might surprise you but the burgers are not the star of the show this evening. This Loaded Baked Potato Salad and the BBQ Roasted Veggies that will follow this post are the definite show stoppers for tonight! Read More
Taking care of a little cousin isn’t always easy. I thank God for Lala, my older cousin. She always had patience with me. She always showed me love. How did she have so much patience? I loved taking care of Nohely and Herlis but the latter was most difficult. Feeding our food, doing our daily activities, etcetera became difficult tasks to complete. She is little, it is understandable. Is this completely normal? I don’t know. Nurture vs nature, right? I guess. I’m not too sure the exact details or maybe I do. She did eat this Zesty Shrimp Salad, though, so we couldn’t have done that bad.
Spending time with Nohely was such a great experience. I never thought I would be able to create such a beautiful bond with her. I hadn’t always been this close to her. Sometimes, I would think to myself that I would not be able to connect with her because I missed out on getting this close to her for some of her years. Life is like that. It throws you lemons and you make lemonade. In this case, we made a healthy dressing for our wonderful Southwestern Salad.
Without further ado, I will finally begin getting around to all the stories I have to tell. Unfortunately, it’s been a long time since I provided consistency to my blog, chefNia*. I am happy that I’ve found a new outlet to express myself without any HTML and CSS problems. Thank God, I brought Simple Caprese Salad with me to cure the blog hiatus woes.
