Hello blogosphere! I have been gone for almost a month now. I hate when I leave for such a long period of time without announcing it. I get so wrapped up in the packing, planning, and missing of the family prior to my actual departure on a trip that I forget to blog. As always, I apologize for that. I do really mean it, though. First creation I made when I got home was this Fresh Crab Salad as a little reminder of Hawaii. I miss it but I missed the comfort of my own home and family more.

Ahhhh! If it isn’t the classic Waldorf Salad by The Waldorf Astoria Hotel. Most places no longer serve this as the real deal anymore. What ever happened to the original Waldorf Salad? The classic. The one with simple ingredients able to be put together in just mere minutes. Even the hotel doesn’t serve it the classic way anymore. Clearly, I am on a roll lately with my summer meals. This is the time of year where I can use all my favorite fruits and veggies to really let your body shine from the inside out. I have been wanting to share this recipe for a while but can never get any decent pictures. Believe me, I will do a revamp of these photos sooner or later. Somehow Russian Beet Noodle Salad never have justice in photos. Why is that? Do beets not photograph well when turned into beautiful, succulent veggie noodles that are baked so their juices can just totally envelop my taste buds?! I guess not. I am loving how I am feeling doing the Shakeology Cleanse these couple of days. I have decided to do it the length of time of Silent Weekend this year, 4 days. I am enjoying the clean feeling of just Greenberry, fruit, and 1 salad a day. Today, it’s this Asian Chicken Salad.
I was so in the mood to make Russian Beet Noodle Salad and, with the crazy 57 mph winds from yesterday’s afternoon thunderstorms; I just let Marylex take the car and called it a day for myself.
