You know I love all things festive and this week is St. Patrick’s Day. We hung up some lucky four leaf clover garland, bought the cutest floral arrangement made of eucalyptus and other gorgeous greens, made the most adorable wreath for the front door and we basically have the house all covered in everything green. I made these cute Rainbow Fruit Skewers to get a little taste of the rainbow on a search for my own pot of gold this year. Tell me you love Mozzarella Sticks! Growing up, these were an all-time favorite of mine. Almost every restaurant we went to that had a kids’ menu had Mozzarella Sticks and you better believe that that was my meal of choice. There is nothing like that piping hot, crispy breaded cheese stick of joy that melts as you pull both sides and wrap the cheese around your finger. Or is that just me?
Anyway, it has been way too long since I had Mozzarella Sticks in my life. So many things given up when I gave up sugar and flour a few years back. There are definitely some questionable ingredients in Mozzarella Sticks all across the board, whether in a restaurant, homemade or found in the frozen section of your local supermarket. So I can say I am pretty happy staying away from that; yet, I had a deep longing for some good Mozzarella Sticks. I sure do love my cup of coffee bright and early in the morning, but; there’s nothing quite like a cup of tea in the late afternoon as the sun goes down. The sunsets here in city beautiful are just that, beautiful. When I have a cup of tea, almost always earl grey, I often crave a little something sweet. Preferably accompanied by a sweet little French macaron. When that is not possible, Lavender Honey Bites will suffice.
I am sure that not everyone is a fan of flowery desserts or treats, like I am. Just trust me on this one, though. There is nothing like the combination of fresh lavender, raw honey and natural lemon zest. These three flavors come together so nicely in this protein packed afternoon tea cookie. More like cookie dough bite or half-baked cookie. Whatevs! It’s almost too good to be true. Don’t get me wrong, you can eat them at any time of the day. I haven’t made any cookie dough bites in quite a while but I have a recipe that I’ve been following for years with interchangeable ingredients, such as here and also here. These new Shamrock Mint Bites are an absolute minty perfection! Growing up, mint chocolate chip was my favorite ice cream flavor, period. Anything with the flavor of mint had an A+ in my book. Plus, I wanted green peppermint syrup on everything! Super unhealthy, I know. The chocolate chips were not the main attraction to me though, as they are for most people, everything was about the mint, to me. Minty green this and minty green that. Ever since we bought our house and moved in, we have gone to IKEA a few times to get ideas and inspiration as well as buy some good pieces of furniture that have been on our IKEA Family shopping wish list for quite a while. From the moment you walk into any IKEA store worldwide, the smell of fresh Swedish inspired cinnamon roll sticky buns hits you smack in the face. With all the times I’ve been there and gotten weak in the knees at the entrance as the sliding glass doors open from the toxic sugary scent in the air, I have never given into the addictive temptation of shoving one in my face and scarfing it down in less than 60 seconds. Trust me, as girl with recovery from eating disorders and food addiction, I certainly do think about what it would taste like and what it would feel like to eat one of these. The thought of sweet cream cheese icing dripping off of the sides of a steamy hot cinnamon roll with sticky cinnamon sugar paste melting all over my fingers as I take a bite of heavenly gluten death. I bet you did not see that one coming, believe you me, we did not at all either. We tried to do everything in our power to keep it on the hush-hush, that was super freaking hard. We only shared it with a very select few of our family and friends, less than five so you can count it with one hand. I have literally been dying from the inside out dying to write it on over the blog and shout it from the rooftops. I cannot believe I’m a homeowner. Just yesterday I was looking for the recipe of our Laundry Detergent Pods and I came across a post that talks about how desperate we were to buy a house but at the same time how we were just simple trusting God to save up money and hope you are too.
