These days it’s been pretty cold and we needed something to keep warm. My grandma can make a mean lentil soup so I thought I would try to mimic one of her recipes with a kick and I call it my Hearty Lentil Soup. This made so much I stored a bunch of it in mason jars for when I gets cold again. Even though it’s Florida, the weather’s
bipolar crazy, so to speak, and it’s hot one day and cold for the next three days and maybe rain, haha. Ever since we moved to the new house, I take walks through the woods daily. We live on a large conservation area that used to be a golf course. In the early 80s, they transformed it into a small village. On the back area of the golf course is a large forest. I will be posting those photos soon as I organize my OneDrive. There’s a nice trail I walk through each day about five times. That’s about 6 to 7 miles just in the morning, which makes me feel like I’m pretty active. Yay for me! I track it all on my Runtastic Moment Basic fitness tracking watch that I got for Christmas from my honey.

There’s all kind of wildlife through the forest in “the woods“, like I like to call it. We are also on two lakes that somehow lead to Lake Catherine. Anyhow, there’s wildlife! I absolutely love it. It gives me such an Alaskan feel. I miss the vibe while traveling through Alaska and I simply can’t wait to go back. I’ve still been keeping in touch with some nice friends we met in Anchorage, Dannielle and Tom, I’ve been able to do this through the Facebook Messenger app. I would like to pop my head in at Salmon Berry Tours and get over to Fairbanks to eat at the Loose Moose Café. I know, I know… It sounds like an absolute dream but it’s true! Many people don’t think to go to Alaska; yet, there’s just so much to explore there. Have you ever been to Alaska? Did you love it? Is it on your bucket list? It was on mine, too, and I scratched it off the list in September. I still don’t think I could ever get enough of the beauty, the vibe, the people and the wildlife, AH!
Eating this Hearty Lentil Soup reminds me of sitting by the fire in our hotel suite, which was a total accident. It seems like they had us down for an ADA room and we told them to hold that room for someone else who may really need it; they said the only room available was the king fireplace suite. Due to the inconvenience, they gave us the upgrade at no charge. Talk about a miracle, huh? Thank you so much, Best Western: Pioneer Park Inn; hope to come stay with you again soon! For now, while I can’t be there, I’ll eat my Hearty Lentil Soup and dream in despair, just kidding. Do you have a fireplace? Is it built-in? I am so freaking jealous right now, if you do have one in your house. We don’t have one in the new house but we plan to get an electric one sooner than later. I can’t wait. Is yours an electric? I’m jealous of you, too. HA! Hopefully, soon I won’t be.
