Before you think of the scene in The Grinch That Stole Christmas with Jim Carrey where the Grinch bites into a raw onion and juicy drips down into his thick green, manly beard that makes virtually anyone cringe from the inside out, think again. I have had this on my mind for ages but every time I bought the onions for it, I’d think of that movie scene and spiralize them instead for several uses. Now, I came to my conclusion that this had to be something delicious. I would dream of all different flavors that I could use to make this dish come to life.
Boy, was I on target when I woke up with the epiphany to use sun-dried tomatoes in oil, pistachios, crumbled goat cheese, raw honey, and balsamic vinegar. It was like a spark of energy hit me and I just knew this was going to be my next best hit on the blog!
Sometimes, I lack inspiration but when I went to Target the other day and walked down several aisles of mismatching plates in different colors, shapes, and sizes with intricate detail and design from the very touch to the gloss or matte finish. I bought several cups, plates, bowls, and whathaveyou. All I need to do now is go to my patio storage to pull out my blog props box <— haha, that rhymes…and get out different mix matched beauties to match up with a dish I have been craving, dreaming, lusting, and journaling all about for weeks.
It is the absolute perfect idea to solve my non-inspired self from crazy non-inspired moments, days, or weeks. Using the plate featured above, I pulled my Sweet Stuffed Onion out of my hat journal to bring to you all to drool over. Hopefully, you’ll make this before reading the posts that precede this. Focus on just the idea of a drool-worthy, mouth-salivating, appetizer that is this perfect Sweet Stuffed Onion.
I would keep you for long but I will leave you with these thoughts: I am set to sail to Hawaii in September and I am so stoked! I am flying from Orlando to Salt Lake City to Seattle to Vancouver, BC over a period of several days in order to make my way to the ship that will take me to every single island in HAWAII. I know I cannot believe it either.
I love what I do and I love being in this wonderful relationship with God because He makes all things like this happen. Let’s just say this is the start of many Hawaiian inspired dishes that will come to me over a period of time before, during, and possibly even after the ship has sailed back home.

Get a taste of this gorgeous stuffed beauty filled with a creamy mixture of melting, crumbled goat cheese; sweet, oily sun-dried tomatoes; crunchy, savory bits of pistachio; the sweet hint of raw honey and bubbling balsamic vinegar just oozing between the layers of this Sweet Stuffed Onion.
2 vidalia onions, peeled + halved
¼ cup sun-dried tomatoes (in oil)
¼ cup raw pistachios
¼ cup crumbled goat cheese
1 tsp raw honey
¼ balsamic vinegar, divided
Spray coconut oil
Preheat oven to 400 ̊ F.
Peel and halve onions.
Spray coconut oil on baking sheet. Place the onion halves flat side down. Using an apple corer or melon baller, remove some of the center of the onions without puncturing the bottom. Set aside the onion you scraped out.
In the food processor add the tomatoes, pistachios, goat cheese, honey, and extra onion. Pulse until creamy. With a small spoon, fill the inside of the onions with your creamy mixture.
Drizzle 1 tbsp of balsamic vinegar over each stuffed onion. Spray them with coconut oil.
