I’ll be honest, it’s been a really long time since my family and I order Chinese takeout to be delivered to our house for lunch, or even dinner. It used to be a staple in my mom’s kitchen throughout my childhood. I didn’t necessarily grow up with unhealthy, junk food at my house. There were just those days that my parents would wake up and know for sure that they wanted nothing but a bowl of house special fried rice and honey garlic chicken maybe even Asian BBQ spare ribs to split with the option of an eggroll per person or some crab rangoons to share. The latter is my personal favorite. Super freaking delicious yet super freaking unhealthy!
There is still nothing like a bowl of hot steaming special fried rice to fill a winter tummy. Do you like to order Chinese takeout on days you just do not want to cook at all? Of course, none of these meals are actually anything that you can put the label of “healthy” on; the thing is that Chinese takeout has simply become socially acceptable and heath is not questioned when placing an order for a heart attack in a cardboard box delivered to your front door. We live on a large conservation area that used to be a golf course. In the early 80s, they transformed it into a small village. On the back area of the golf course is a large forest. I will be posting those photos soon as I organize my OneDrive. There’s a nice trail I walk through each day about five times. That’s about 6 to 7 miles just in the morning, which makes me feel like I’m pretty active. Yay for me! I have given black bean burgers a shot way too many times. I have had many end results: gooey, goopy, dry, crumbly, just plain yuck! Hello blogosphere! I have been gone for almost a month now. I hate when I leave for such a long period of time without announcing it. I get so wrapped up in the packing, planning, and missing of the family prior to my actual departure on a trip that I forget to blog. As always, I apologize for that. I do really mean it, though. First creation I made when I got home was this Fresh Crab Salad as a little reminder of Hawaii. I miss it but I missed the comfort of my own home and family more.
Sometimes, life throws curveballs at you even if it’s a positive one. Completely out of time, I put the blog to the bottom of my to do list. I look forward to a day where I have less and less to worry about doing my blog like it’s a chore but to a day where I can write it because I have plenty of time on my watch to do so. Good morning, everyone! I thought I would write a bit while on the bus/train to get to the NAD-RID Conference. I love it here in Atlanta! Such a beautiful city with so much history and culture. I come every year in January for Passion Conference but it’s usually freezing. Last time I was here in times of heat was ’96 right after the Olympics. I have so many good memories here.
