These days it’s been pretty cold and we needed something to keep warm. My grandma can make a mean lentil soup so I thought I would try to mimic one of her recipes with a kick and I call it my Hearty Lentil Soup. We live on a large conservation area that used to be a golf course. In the early 80s, they transformed it into a small village. On the back area of the golf course is a large forest. I will be posting those photos soon as I organize my OneDrive. There’s a nice trail I walk through each day about five times. That’s about 6 to 7 miles just in the morning, which makes me feel like I’m pretty active. Yay for me! Hello there, my lovelies! I am back from a long overdue trip to Miami to see my family. I had a wonderful time with my parents, my cousins, aunts and uncles. I certainly had a blast! Miss them already but I will be back to visit as soon as I can.

Last night, I went to the grocery store looking for some good raw honey to make a Tropical Dream Smoothie in the morning. Of course, I didn’t leave with just raw honey but with a little surprise. I found just about the most delicious peanut butter EVER! I love Earth Balance products but this is their best yet.
These are my favorite on the go overnight oats for quick snacks between assignments for work. I make a few in the beginning of the week and when it is time to go, I grab one with a spoon and run out the door.
