Yogurt is not always my favorite. No matter how you put it, dairy is not my friend. I make exceptions at times—almost always during holidays—for dairy products and they just have to come to play. I really shouldn’t though. I’ll be real, yogurt doesn’t disagree with me. I just have a hard time picking a good granola to eat it with. I can bet my butt that I will find or make some soon enough. Until then, these Berry Yogurt Bites might be as close as you can get me to yogurt.

Perhaps you can tell by seeing posts from previous years during the Fall season that I absolutely love everything pumpkin, everything Autumn and everything sweet. Well, duh, who doesn’t? I have made everything from pumpkin smoothie to pumpkin pie, pumpkin cookies and even pumpkin hand scrub (not edible). During the summer months, I love eating full of color and I know I rant and rave about it all the time but I am so serious. I always look for inspiration to incorporate more color in my meals through Pinterest, other blogs, Instagram, magazine subscriptions, and even Twitter. More than anything, I would say Pinterest. Pins that I have had for a very long time on a specific board that I have not known how to healthify are always at the top of my blogging experimentation list; I call this my blogspiration. Sweet Potato Taco Boats were born from that.
For blogspiration this week, I have taken many of my old pins and revamped them by adding, taking away, or completely uprooting classic dishes as well as mixing and matching a variety of ideas to come up with a healthy, nutritious, colorful summer dish. I love anything tacos and I am sure you all got the hint with my post from two days ago with my Taco Bowls. This is just another one of the ways I can truly say I will forever enjoy eating tacos.
I have had the cutest little taco shell tins that I got at Walmart for the longest time. They were one of those AS SEEN ON TV things that I just love to get from the checkout aisle at my local Walmart. I got it as soon as I saw it and knew one day I would come up with some cool taco bowls or taco shells or taco something for the summer.

Ahhhh! If it isn’t the classic Waldorf Salad by The Waldorf Astoria Hotel. Most places no longer serve this as the real deal anymore. What ever happened to the original Waldorf Salad? The classic. The one with simple ingredients able to be put together in just mere minutes. Even the hotel doesn’t serve it the classic way anymore.
