Italians love their cheese and they sure love their cured meats. Everywhere we went in Tuscany, we were served cheeseboards and charcuterie. Oh, and the seafood! They make the most delicious seafood. It almost always came on a wood cutting board and it was always amazing. Read More
Today, I bring to you these cute Mini Caprese Salads. In an attempt to make prepping my wife’s lunches for work a bit easier, we have turned to mason jars for easier storage and simpler eating. Mini Caprese Salads was one of the very first meals I made for her in small masons. She loves them so much that I have been making them every week for the last two months! Thank God we are taking a 50 day road trip so she won’t get tired of them. Read More
Last night, we had our friends Melissa and Chris over for dinner. We had been planning this for a week or two and I was eager to make them my homemade healthy pizza. When we hung out last, Chris had mentioned how much he loves Meat Lovers Pizza. I thought this was a perfect time to make a Meat Lovers Pizza of my own and have them come try it out. Read More
This week we have the oldest cousin, Cathy, staying with us. We had a blast with the younger ones, that is for sure! There were differences in quality time with each of them, most definitely. Cathy can take care of Bentley and handle him on a leash. SCORE! It is extremely hard for anyone to handle him on a leash because he’s big. Weimaraners have so much stamina and energy.
Bentley can run forever! The only problem is that he hates the heat. HA! I think it has more to do with the ground being hot on his paws. Either way, he is SO lazy. He makes you want to be with him rolling around all day! We love him so much. It has been so nice to see all the girls, Cathy; Nohely; Herlis, love on him so much. They practically have fallen in love with him. I mean, who wouldn’t? Read More
Without further ado, I will finally begin getting around to all the stories I have to tell. Unfortunately, it’s been a long time since I provided consistency to my blog, chefNia*. I am happy that I’ve found a new outlet to express myself without any HTML and CSS problems. Thank God, I brought Simple Caprese Salad with me to cure the blog hiatus woes.
I love Caprese Salad! Who doesn’t love fresh Caprese? From the creamy, fresh mozzarella cheese with crisp basil leaves sandwiched between juicy slices of sweet tomato drizzled in lovely extra virgin olive oil and balsamic vinegar, I don’t know what is not to love.
More so on the topic, I love quesadillas but they can be extra fatty with too much of the wrong thing and too much of a mess. Although this meal is a little messy, cause when is melted cheese all over your plate, hands and face not messy? If you don’t know the answer to the above mentioned act in question, never. Melting cheese is always messy and it’s always delicious and it’s never to be argued why you’re full of messy, melty, delicious, juicy cheese because it’s absolutely the most wonderful party in your mouth feeling.
